Try this amazing and refreshing Middle Eastern chickpea salad.  It is so quick to prepare. Let’s face it, my husband Paul is a better cook than me. When I have a party, he is usually the one preparing the food. He just delivered this for a ” Re-invent Your Look For Spring” event with my girlfriends and clients. They all asked for the recipe, and they also want to meet my husband lol!

So here it is. It is very simple, just mix all the ingredients together. You can serve the salad with some Greek yogurt on the side. It is a great appetizer or side dish. It will serve 4:

  • 19oz chickpea can, well rinsed and drained
  • 1 ripe tomato, finely chopped
  • 2 stalks of celery, the tender inside part, thinly sliced
  • 1/2 English cucumber, diced. It will make a big cup
  • 1/2 cup green olives, pitted, rinsed and chopped
  • 2 tbsp. lemon juice
  • 2 tbsp. chopped Italian parsley
  • Extra virgin olive oil, pepper and salt to taste
