Have you ever tried kohlrabi? Kohlrabi belongs to the cabbage family. It can be eaten raw or cooked. It is crunchy and slightly spicy, maybe like something between a radish and a turnip. I like to add it to my salads with green apples. It is so refreshing!

For 6 servings you will need:

-2 tsp. sesame seeds or caraway seeds

-1 tbsp. tamari sauce (optional)

-5 tbsp. olive oil

-3 tbsp. vinegar.  I like white wine or champagne vinegar

-3 medium size kohlrabi

-6 to 8 cups of any salad. I like frisee or young arugula

-2 green apples

-8 tbsp. chopped fresh chives

-1 to 2 tbsp. of Dijon mustard

-Salt and pepper

Preparation:

You will toast the sesame or caraway seeds in a small pan until they are fragrant. Be careful, do not burn them, and toss often.

Mix the Dijon mustard, oil and vinegar, salt and pepper to your taste, and the optional tamari sauce in a bowl to prepare the dressing.

Slice the peeled kohlrabi and the unpeeled but well washed and cored green apples with a mandolin. I usually select 2mm as a width.

Put the salad in a large bowl, add the dressing with the sliced kohlrabi and apples, mix with the chopped chives. Reserve some of the chives to top the salad just before serving.
