A New Recipe! Perfect as the weather gets chillier. Bison Chili is not only low in fat but it also provides healthy grass fed meat. I bought the last beautiful heirloom tomatoes at the farmers’ market, a can of beans and voila! In a few minutes I had a wonderful meal that I was able to freeze in individual portions. Recipe is below:

For 4 servings, you will need:

– 1 pound of ground bison meat (check your local grocery store!)
– 4 large tomatoes, diced ( I did not add any tomato paste or extra puree)
– 1 large onion
– 1 can kidney beans (or two cans if you like more beans and bigger portions), rinsed
– Parsley or fresh cilantro
– Salt and pepper to taste

Cook the thinly sliced onion with 2 tbsps. olive oil or butter, salt and pepper until translucid. Then add the meat and cook it until it is brown; it should take a few minutes. Add the cubed tomatoes, and let simmer until they are cooked. At the last minute, add the rinsed beans and let simmer for 5 to 10 minutes. It will be ready before you know it.

I serve it with either chopped parsley or cilantro, or with grated cheese. For the picture I sprinkled some diced onion as well. Enjoy! It is very easy to freeze and then bring to the office for a healthy and quick lunch!
